Winning Soup Recipe

St George’s College Junior School pupils, brother and sister Isaac and Isabella Rodrigues-Mendes have won The Savill Gardens ‘Pumpkins in The Park – Pumpkin Recipe’ competition.

Their first prize was a lunch for four in The Savill Gardens restaurant, where they were also presented with a giant pumpkin, together with a complimentary visit for four people into The Savill Garden. Their winning pumpkin soup recipe will be served as part of the delicious seasonal menu in the restaurant.

Isaac and Isabella donated the giant pumpkin to the head chef at St George’s College Junior School so he could make their winning recipe for the School.

Their winning recipe is –
1 Large Pumpkin
2 Medium Potatoes
3 small shallots
1 and half pints of chicken or vegetable stock
half a teaspoon of freshly grated nutmeg
1 quarter of a pint of double cream
 
 
1.    Scoop out the flesh of a juicy pumpkin and add to the pan
2.    Peel and chop the potatoes and shallots into cubes and add them to the pan
3.    Make up the stock and add this to the pan
4.    Bring the mixture to the boil and then turn down the heat and simmer until the vegetables are tender
5.    Once the vegetables are tender, stir in the ground nutmeg and the double cream   and whizz together in a blender until smooth and creamy
6.    Enjoy the hot soup with warm crusty bread and butter!
